BOSTON BROWN BREAD

Boston Brown Bread is a hearty, moist bread with a slightly sweet flavor, traditionally made with a mix of whole wheat flour, rye flour, and cornmeal. Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup rye flour

Instructions:

  1. Prepare the Steaming Setup: If using a steaming method, bring a large pot of water to a simmer, setting up a steamer basket or rack to keep the bread pan above the water. If using the oven, preheat it to 350°F (175°C) and grease a loaf pan.
  2. Mix the Dry Ingredients: In a large bowl, combine the whole wheat flour, rye flour, cornmeal, brown sugar, baking soda, and salt. Mix well to ensure even distribution of the dry ingredients.
  3. Combine the Wet Ingredients: In a separate bowl, whisk together the buttermilk, molasses, and vegetable oil until well combined.

  6. Steam or Bake:
    • For Steaming: Carefully place the pan in the steaming basket or on the rack, cover the pot, and steam the bread for about 1 to 1.5 hours, checking occasionally to ensure the water level remains high. The bread is done when a toothpick inserted into the center comes out clean.
    • For Baking: If baking, place the loaf pan in the oven and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Let the bread cool in the pan for about 10 minutes before removing it and transferring it to a wire rack to cool completely. Slice and serve warm with butter or alongside your favorite hearty dish.
