Ingredients:

For the Cake:

  • 1 box lemon cake mix (plus ingredients listed on box)
  • Zest of 1 lemon (optional, for extra flavor)

For the Blueberry Sauce:

  • 1 cup fresh or frozen blueberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 1 tbsp cornstarch mixed with 1 tbsp water

For the Topping:

  • 1 1/2 cups whipped cream or whipped topping
  • Extra blueberries and lemon zest, for garnish

Instructions:

  1. Prepare the Cake: Preheat the oven according to the instructions on the cake mix box. Mix and bake the lemon cake according to package instructions, adding the lemon zest if desired, in a 9×13-inch baking pan. Allow it to cool for 15-20 minutes after baking.
  2. Make the Blueberry Sauce: While the cake cools, combine the blueberries, sugar, lemon juice, and water in a small saucepan. Bring to a simmer over medium heat, stirring occasionally, until the blueberries begin to release their juices (about 5 minutes). Stir in the cornstarch mixture and cook for another 1-2 minutes until thickened. Remove from heat and let cool slightly.
  3. Poke the Cake: Using the handle of a wooden spoon, poke holes throughout the cake, about 1-2 inches apart.
  4. Add Blueberry Sauce: Pour the blueberry sauce over the cake, making sure it fills the holes. Spread evenly across the top of the cake.
  5. Chill and Top: Let the cake cool completely in the refrigerator, about 1-2 hours, to let the flavors meld. Once chilled, spread the whipped cream over the top.
  6. Serve: Garnish with extra blueberries and a sprinkle of lemon zest. Slice and serve chilled.

Enjoy the fresh, fruity taste of this beautifully layered Lemon Blueberry Poke Cake!
