Ingredients
For the Loaf:
- 1 cup dry brown or green lentils
- 2 ½ cups water or vegetable broth
- 1 tablespoon olive oil

- 2 cloves garlic, minced
- 1 cup carrots, grated
- 1 cup celery, finely chopped
- ½ cup rolled oats
- ½ cup breadcrumbs (gluten-free if needed)

- Cook the Lentils:
- Rinse lentils under cold water. In a medium saucepan, combine lentils and water (or broth) and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes, or until lentils are soft but not mushy. Drain any excess liquid and set aside.
- Prepare the Veggies:
- Preheat the oven to 375°F (190°C) and line a loaf pan with parchment paper.
- Heat olive oil in a large skillet over medium heat. Sauté onions, garlic, carrots, and celery until softened, about 5 minutes. Remove from heat.
- Make the Loaf Mixture:
