OKRA CURRY

Okra Curry is a delightful vegetarian dish that celebrates the unique texture and flavor of okra, simmered in a rich and aromatic curry sauce. Ingredients:

  • 1 lb (450g) fresh okra, trimmed and cut into 1-inch pieces
  • 2 tbsp oil (coconut or vegetable)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder (adjust to taste)
  • 1/2 tsp garam masala
  • 1 large tomato, chopped
  • 1/2 cup coconut milk
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. Prepare the Okra: Pat the okra pieces dry with a paper towel to minimize sliminess during cooking.
  2. Sauté the Okra: Heat 1 tablespoon of oil in a large pan over medium heat. Add the okra and sauté for 5-6 minutes until lightly browned. Remove from the pan and set aside.
  3. Cook the Aromatics: In the same pan, add the remaining tablespoon of oil. Add the cumin seeds and let them sizzle for a few seconds. Then, add the chopped onion and sauté for 5-7 minutes until softened and golden.
  4. Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
  5. Add Spices and Tomato: Add the ground coriander, turmeric, chili powder, and garam masala. Stir to combine, then add the chopped tomato. Cook for 4-5 minutes until the tomatoes break down and create a thick sauce.
  6. Add Okra and Coconut Milk: Return the sautéed okra to the pan and stir to coat it with the spices and tomato mixture. Pour in the coconut milk and season with salt to taste.
  7. Simmer: Lower the heat and let the curry simmer for 8-10 minutes, allowing the flavors to meld and the okra to become tender.
  8. Garnish and Serve: Garnish with fresh cilantro and serve hot with rice or naan.
