PILAU RICE

Pilau Rice is a fragrant and colorful side dish that’s perfect for pairing with curries, grilled meats, or vegetarian dishes. This rice dish is infused with whole spices like cinnamon, cardamom, and cloves, creating a warm, spiced aroma that permeates each grain. Traditionally cooked with onions and sometimes enhanced with turmeric or saffron for a golden color, pilau rice offers a beautiful, lightly spiced flavor that complements rather than overpowers other dishes. Ingredients:

  • 1 cup basmati rice, rinsed and drained
  • 2 tbsp ghee or vegetable oil
  • 1 medium onion, finely chopped
  • 1 cinnamon stick
  • 3-4 whole cloves
  • 2-3 green cardamom pods, lightly crushed
  • 1 bay leaf
  • 1/2 tsp ground turmeric (optional, for color)
  • 1 3/4 cups water or chicken/vegetable broth
  • Salt, to taste
  • Fresh cilantro or toasted nuts, for garnish (optional)

Instructions:

  1. Rinse the Rice: Place the basmati rice in a fine mesh sieve and rinse under cold water until the water runs clear. This helps remove excess starch and keeps the rice fluffy after cooking.
  2. Cook the Spices: In a medium saucepan, heat the ghee or oil over medium heat. Add the cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté for 1-2 minutes until the spices release their aroma.
  3. Add the Onion: Add the chopped onion to the pan and cook until softened and lightly golden, about 5 minutes.
  4. Toast the Rice: Stir in the rinsed rice, coating it with the oil and spices. Cook for 1-2 minutes, stirring gently, until the rice is slightly toasted.
  5. Add Liquid and Simmer: Pour in the water or broth, add salt to taste, and the turmeric if using for color. Bring to a boil, then reduce heat to low, cover the pan with a tight-fitting lid, and simmer for 15 minutes.
  6. Rest and Fluff: After 15 minutes, remove the pan from the heat and let it sit, covered, for 5-10 minutes. This allows the rice to finish steaming. Fluff the rice with a fork before serving.
  7. Garnish and Serve: Serve hot, garnished with fresh cilantro or toasted nuts if desired.
