Crunchy Granola Bars

Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1 cup rice crispy cereal
  • 1/2 cup chopped nuts (almonds, cashews, or walnuts work well)
  • 1/4 cup sunflower seeds (optional)
  • 1/2 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup coconut oil or unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dried fruit (raisins, cranberries, or apricots) — optional
  • 1/4 cup mini chocolate chips (optional)

Instructions:

  1. Prepare the baking pan: Line an 8-inch square baking dish with parchment paper, leaving a little overhang for easy removal of the bars later.
  2. Toast the oats: In a large dry skillet, lightly toast the rolled oats and rice cereal over medium heat for 3-4 minutes until they become fragrant and slightly golden. Stir occasionally to avoid burning. Transfer to a large mixing bowl.
  3. Melt the wet ingredients: In a small saucepan over low heat, melt together the honey (or maple syrup), peanut butter (or almond butter), and coconut oil (or butter), stirring occasionally. Once melted, remove from heat and stir in the vanilla extract and salt.
  4. Mix the dry ingredients: To the bowl with oats and cereal, add the chopped nuts, seeds, and any other add-ins like dried fruit or chocolate chips. Stir until evenly combined.
  5. Combine the wet and dry ingredients: Pour the melted wet mixture into the dry ingredients. Use a spatula or wooden spoon to mix everything together until well-coated. The mixture should feel slightly sticky but hold its shape when pressed.
  6. Press the mixture into the pan: Transfer the mixture into the prepared baking pan. Use a spatula or your hands (wet your hands if needed) to press the mixture down firmly into an even layer. This ensures the bars hold together after baking.
  7. Chill and set: Refrigerate the pan for at least 2 hours, or until the bars are firm and set.
  8. Cut and serve: Once set, lift the granola block out of the pan using the parchment paper overhang. Place it on a cutting board and slice into bars or squares of your preferred size.
