Ingredients

  • 4 large bell peppers, halved and seeds removed
  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1 small onion, diced
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: diced avocado, sour cream, salsa, chopped cilantro

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Peppers: Place the halved peppers cut-side up in a baking dish. Drizzle with a bit of olive oil and bake for about 10 minutes to soften them slightly. Remove from the oven and set aside.
  3. Cook the Filling: In a skillet over medium heat, add a drizzle of olive oil and cook the diced onion until softened, about 3-4 minutes. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
  4. Season and Combine Ingredients: Add the taco seasoning, black beans, corn, and cooked rice to the skillet with the ground beef. Stir to combine, cooking for an additional 2-3 minutes. Adjust seasoning with salt and pepper if needed.
  5. Stuff the Peppers: Spoon the beef mixture into each pepper half, pressing down gently to pack the filling in.
  6. Bake and Top with Cheese: Sprinkle shredded cheese on top of each pepper. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  7. Serve: Top with desired toppings like avocado, sour cream, salsa, or chopped cilantro. Serve warm.

Enjoy these flavorful and hearty Taco Stuffed Peppers as a complete meal!
