Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with cupcake liners.
  2. Make the Cornbread Batter: In a large bowl, whisk together the cornmeal, flour, baking powder, and salt. In another bowl, combine the milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded cheddar cheese.
