  • ¼ cup fresh basil leaves, plus extra for garnish

  • ½ tsp red pepper flakes (optional, for a hint of heat)
  • Salt and pepper, to taste
  • 1-2 tbsp pasta cooking water (to thin the sauce, if needed)
  • Chopped cherry tomatoes (optional, for garnish)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Reserve 1-2 tablespoons of pasta cooking water before draining, and then set the cooked pasta aside.
  2. Make the Avocado Sauce: While the pasta is cooking, place the ripe avocado flesh into a food processor or blender. Add the minced garlic, olive oil, lemon juice, fresh basil, Parmesan cheese (if using), red pepper flakes (if using), and a pinch of salt and pepper. Blend until smooth and creamy.
