Ingredients:

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • 1 tsp vanilla extract
  • 4-5 ripe bananas, sliced
  • 2 cups Nilla wafer crumbs (from about 30-35 cookies)
  • 2 tbsp butter, melted (for the Nilla wafer crust)
  • Additional Nilla wafers (for garnish, optional)

Instructions:

  1. Prepare the Crust: Start by making the Nilla wafer crust. Crush about 30-35 Nilla wafers in a food processor or by placing them in a zip-top bag and crushing them with a rolling pin until you have 2 cups of crumbs. In a bowl, mix the crushed wafers with the melted butter until the crumbs are evenly coated. Press the mixture into the bottom of a greased 9×9-inch baking dish or square pan to form a firm, even crust. Place the pan in the fridge to set while you prepare the pudding layers.
  2. Make the Pudding Layer: In a medium bowl, whisk the instant vanilla pudding mix with 2 cups of cold milk. Let it sit for about 2 minutes to thicken. In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Fold in the whipped topping and vanilla extract until everything is well combined. Gently fold in the pudding mixture and stir until smooth.
  3. Assemble the Banana Pudding Squares: Take the prepared crust from the fridge and layer half of the banana slices on top. Spread half of the pudding mixture over the bananas, smoothing it into an even layer. Repeat with another layer of banana slices and then the remaining pudding mixture. Smooth the top layer with a spatula, ensuring it covers the bananas evenly.
  4. Chill and Set: Cover the baking dish with plastic wrap and refrigerate the Banana Pudding Squares for at least 4 hours, or preferably overnight, to allow the layers to firm up and set.
  5. Serve: Before serving, you can optionally garnish the top with additional crushed Nilla wafers or whole wafers for an extra touch of texture. Slice into squares and enjoy!
