Ingredients:

  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), chopped
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • 2 cups beef or vegetable broth
  • Fresh cilantro and lime wedges, for garnish (optional)

Instructions:

  1. Brown the Meat: In a large pot or Dutch oven, heat a splash of oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.
  2. Sauté the Vegetables: Add the chopped onion, garlic, and bell pepper to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Add the Spices: Stir in the chili powder, cumin, oregano, smoked paprika (if using), salt, and pepper. Cook for an additional minute to toast the spices.
  4. Combine the Ingredients: Add the diced tomatoes (with their juice), kidney beans, black beans, corn, and broth to the pot. Stir well to combine.
  5. Simmer: Bring the chili to a boil, then reduce the heat to low and let it simmer uncovered for about 30-40 minutes, stirring occasionally. This allows the flavors to meld and the chili to thicken.
  6. Adjust Seasoning: Taste the chili and adjust the seasoning if needed. If you prefer a thicker consistency, let it simmer a little longer.
  7. Serve: Ladle the chili into bowls and garnish with fresh cilantro and lime wedges if desired. Enjoy this comforting Mexican Chili with warm tortillas or over rice for a complete meal!
