Baked Southwestern Egg Rolls

Ingredients:

  • 1 tbsp olive oil

  • 1 tsp ground cumin
  • 1 tsp chili powder

  • 12-15 egg roll wrappers
  • Cooking spray or olive oil for brushing

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Filling: In a skillet, heat the olive oil over medium heat. Add the onion and bell pepper, cooking until softened, about 3-4 minutes. Stir in the corn, black beans, cheese, cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined, then remove from heat. Stir in the fresh cilantro if using.
  3. Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
