Spicy Egg Curry

  • 4 large eggs, hard-boiled and peeled

  • 1 large tomato, finely chopped
  • ½ tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp red chili powder (adjust to taste)
  • 1 tsp garam masala
  • Salt to taste
  • ½ cup coconut milk or water (for a thinner sauce)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Eggs: Cut a few shallow slits in the boiled eggs (this helps them absorb the curry flavors). Set aside.
  2. Sauté the Aromatics: Heat the oil in a pan over medium heat. Add the chopped onion and sauté until golden brown, about 5-6 minutes. Add the garlic, ginger, and green chili, and sauté for another minute until fragrant.
