Instant Pot Lasagna

Instant Pot Lasagna is a comforting, layered dish made easy with the speed and convenience of the Instant Pot. This lasagna is packed with savory ground meat, creamy ricotta, melty mozzarella, and tangy marinara sauce, all nestled between layers of tender pasta. Ingredients:

  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, plus extra for topping
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 6 no-boil lasagna noodles
  • 1 cup water

Instructions:

  1. Prepare the Meat Sauce: Set the Instant Pot to sauté mode. Add the ground beef (or sausage), diced onion, and garlic. Cook until the meat is browned and the onion is softened. Drain any excess grease if needed. Add 1 ½ cups of marinara sauce to the meat mixture and stir to combine. Turn off the sauté mode.
  2. Prepare the Cheese Mixture: In a medium bowl, mix together the ricotta cheese, 1 cup of mozzarella, Parmesan cheese, egg, Italian seasoning, salt, and pepper.
  3. Assemble the Lasagna in a Springform Pan: Use a 7-inch springform pan that fits into the Instant Pot. Spread a thin layer of meat sauce on the bottom of the pan. Break the no-boil lasagna noodles to fit the pan, layering them on top of the sauce. Add a layer of ricotta mixture, followed by a layer of meat sauce. Repeat these layers (noodles, ricotta, meat sauce) until all ingredients are used, ending with a layer of noodles topped with a small amount of marinara sauce and extra mozzarella.
  4. Cook in the Instant Pot: Pour 1 cup of water into the Instant Pot insert. Place a trivet inside and carefully set the lasagna pan on top. Cover the lasagna with foil to prevent excess moisture. Seal the Instant Pot lid and set to “Manual” or “Pressure Cook” on high for 24 minutes. When done, allow a 10-minute natural release, then manually release any remaining pressure.
  5. Serve: Carefully remove the lasagna from the Instant Pot. Remove the foil, sprinkle with additional mozzarella if desired, and set under the broiler for a few minutes to melt and brown the cheese. Let cool slightly before slicing.
