Sweet Potato Frittata Recipe

Ingredients:

  • 1 medium sweet potato, peeled and diced into small cubes
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 2 cups fresh spinach (or other greens)
  • 6 large eggs
  • 1/4 cup milk or cream
  • 1/2 cup shredded cheese (cheddar, feta, or goat cheese)
  • 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
  • Salt and pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Cook the sweet potatoes: Heat the olive oil in a large oven-safe skillet over medium heat. Add the diced sweet potatoes and sauté for about 8-10 minutes, stirring occasionally, until they start to soften and become golden brown.
  3. Sauté the vegetables: Add the chopped onion and bell pepper to the skillet and cook for an additional 4-5 minutes, until the vegetables are tender. Stir in the spinach and cook for another 1-2 minutes until wilted. Season with salt, pepper, and herbs.
  4. Prepare the egg mixture: In a bowl, whisk together the eggs, milk or cream, and a pinch of salt and pepper. Stir in half of the shredded cheese.
  5. Combine and bake: Pour the egg mixture evenly over the cooked vegetables in the skillet. Sprinkle the remaining cheese on top. Let the frittata cook on the stovetop for 1-2 minutes, then transfer the skillet to the preheated oven.
  6. Bake the frittata: Bake for 12-15 minutes, or until the eggs are set and the top is lightly golden. You can check doneness by gently shaking the skillet; the center should not jiggle.
  7. Serve: Once baked, remove the frittata from the oven and let it cool for a few minutes before slicing. Garnish with fresh herbs, and serve warm.

This sweet potato frittata is perfect on its own or served with a side salad or crusty bread. It can also be enjoyed cold or reheated, making it an excellent meal prep option for the week ahead!
