Homemade Granola

Homemade granola is a versatile, easy-to-make snack that can be tailored to fit your favorite flavors and ingredients. Ingredients:

  • 3 cups old-fashioned rolled oats

  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dried fruit (raisins, dried cranberries, or chopped apricots)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Mix the dry ingredients: In a large bowl, combine the oats, chopped nuts, seeds, shredded coconut, cinnamon, and salt.
  3. Add the wet ingredients: In a separate small bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract. Pour this mixture over the dry ingredients and stir until everything is evenly coated.
  4. Spread and bake: Spread the granola mixture evenly onto the prepared baking sheet. Bake in the preheated oven for 20–25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  5. Cool and add dried fruit: Remove the baking sheet from the oven and let the granola cool completely. Once cooled, stir in the dried fruit.
  6. Store: Transfer the cooled granola to an airtight container. It will keep at room temperature for up to two weeks.
