Ingredients:

  • 1 tsp unflavored gelatin
  • 2 tbsp water

Instructions:

  1. Make the Panna Cotta: In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it bloom for about 5 minutes.
  2. Heat the Cream Mixture: In a saucepan, combine the heavy cream, milk, and sugar. Heat over medium heat, stirring, until the sugar dissolves and the mixture is warm (but not boiling). Remove from heat and stir in the vanilla extract.
  3. Dissolve the Gelatin: Stir the bloomed gelatin into the warm cream mixture until fully dissolved. Let it cool slightly.
  4. Pour and Chill: Pour the panna cotta mixture into serving glasses or molds, filling them about 2/3 of the way. Refrigerate for 3-4 hours, or until set.
  5. Prepare the Mango Layer: While the panna cotta sets, make the mango layer. In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it bloom for 5 minutes.
  6. Mix the Mango Puree: In a blender or food processor, puree the mangoes until smooth. Add sugar and lime juice to taste. Warm the bloomed gelatin over low heat until it dissolves, then stir it into the mango puree.
  7. Add the Mango Layer: Once the panna cotta has set, gently pour the mango puree over the top of each serving. Refrigerate for another 1-2 hours, or until the mango layer is set.
  8. Serve: Serve chilled, garnished with fresh mango slices or mint leaves if desired.
