Crawfish Boil

Ingredients:

  • 10 lbs live crawfish, rinsed
  • 4 gallons water
  • 1/2 cup salt (for purging crawfish)
  • 1/2 cup seafood boil seasoning (like Zatarain’s or Old Bay)
  • 6 garlic cloves, halved
  • 4 large lemons, halved
  • 3 large onions, quartered
  • 1 lb smoked sausage, sliced
  • 8 small red potatoes
  • 4 ears of corn, cut into halves
  • 3 bay leaves
  • 2 tsp cayenne pepper (optional for extra spice)
  • 6 tbsp unsalted butter (optional for extra richness)
  • Fresh parsley or green onions for garnish (optional)

Instructions:

  1. Purge the crawfish: Place the live crawfish in a large cooler or tub and cover them with water. Add 1/2 cup salt and stir to mix. Let the crawfish sit for about 10 minutes to clean them out, then drain and rinse well.
  2. In a large stockpot, bring 4 gallons of water to a boil. Add the seafood boil seasoning, garlic, lemons, onions, and bay leaves. Let this mixture boil for about 10 minutes to allow the flavors to infuse.
  3. Add the potatoes and sausage to the boiling water. Cook for about 10-15 minutes, or until the potatoes start to become tender.
  4. Add the corn and cook for an additional 5 minutes.
  5. Carefully add the crawfish to the pot and stir. Let the crawfish boil for about 5-7 minutes, or until they turn bright red. Avoid overcooking them.
  6. Turn off the heat and allow the crawfish to soak in the seasoned water for another 10-15 minutes to absorb all the flavors.
  7. Drain the crawfish and vegetables from the pot and spread them out on a newspaper-covered table or large serving platter.
  8. For an extra touch of flavor, melt the butter and drizzle it over the crawfish, or serve on the side for dipping. Garnish with fresh parsley or green onions if desired.
