Braised Greens

Braised Greens are a simple yet flavorful way to enjoy a variety of leafy greens like collards, kale, or Swiss chard. Slowly cooked in a savory broth with garlic, onions, and a hint of acidity from vinegar or lemon juice, these greens become tender and rich in flavor. Braising allows the greens to absorb the flavors of the broth while maintaining their nutrients, making this dish both healthy and delicious. Perfect as a side dish for roasted meats or as a nutritious main course served over grains, braised greens are a versatile and comforting addition to any meal.

Braised Greens Recipe

Ingredients:

  • 1 large bunch of collard greens, kale, or Swiss chard, stems removed and leaves roughly chopped
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 1 cup vegetable or chicken broth
  • 1 tablespoon apple cider vinegar or lemon juice
  • Salt and pepper, to taste
  • 1 tablespoon butter (optional for added richness)

Instructions:

  1. Sauté the onions and garlic: Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and sauté for 4-5 minutes until soft and translucent. Add the garlic and red pepper flakes (if using), and cook for another minute until fragrant.
  2. Add the greens: Add the chopped greens to the pot, stirring to coat them with the oil and onions. Cook for 2-3 minutes until the greens begin to wilt.
  3. Braise the greens: Pour in the broth and vinegar (or lemon juice), then season with salt and pepper. Bring the mixture to a simmer, cover the pot, and reduce the heat to low. Let the greens braise for 20-25 minutes, stirring occasionally, until they are tender and the flavors have melded together.
  4. Finish and serve: If desired, stir in a tablespoon of butter for added richness. Adjust the seasoning with more salt, pepper, or vinegar as needed. Serve the braised greens hot as a side dish or over rice, quinoa, or polenta.

These Braised Greens are hearty, flavorful, and easy to prepare, making them a perfect side dish for any meal. Enjoy their comforting flavors alongside your favorite proteins or grains for a balanced, wholesome dish!
