Runzas

Runzas are a traditional Midwestern comfort food, especially popular in Nebraska, consisting of soft, doughy bread pockets filled with a savory mixture of ground beef, cabbage, and onions. These hand-held delights are hearty and flavorful, perfect for a quick meal or snack. The dough encases the juicy filling, which is seasoned with simple spices, creating a well-balanced bite of tender meat, vegetables, and fluffy bread. Ingredients:

For the Dough:

  • 4 cups all-purpose flour
  • 1 package (2 ¼ tsp) active dry yeast
  • 1 cup warm milk (110°F)
  • ¼ cup sugar
  • ¼ cup unsalted butter, melted
  • 1 egg
  • 1 tsp salt

For the Filling:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cups cabbage, finely chopped
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil

Instructions:

  1. Make the dough: In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until frothy. Add the melted butter, egg, and salt, mixing well. Gradually add the flour and knead the dough for 8-10 minutes until smooth and elastic. Cover the dough with a clean towel and let it rise in a warm place for 1-1½ hours, or until it doubles in size.
  2. Prepare the filling: While the dough rises, heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Add the chopped onions and cook until softened, about 5 minutes. Stir in the chopped cabbage, garlic powder, paprika (if using), and season with salt and pepper. Cook until the cabbage is tender, about 10 minutes. Remove from heat and let the mixture cool slightly.
  3. Assemble the runzas: Preheat your oven to 375°F (190°C). Punch down the dough and divide it into 8 equal portions. Roll each portion into a rectangle, about 6×4 inches in size. Place a generous spoonful of the beef and cabbage filling in the center of each dough rectangle. Fold the dough over the filling, sealing the edges tightly to form a pocket.
  4. Bake the runzas: Place the runzas seam-side down on a greased baking sheet. Bake for 20-25 minutes, or until the tops are golden brown.
  5. Serve: Let the runzas cool slightly before serving. They can be enjoyed warm or at room temperature.
