Baked Scotch Eggs

Baked Scotch Eggs are a healthier twist on the classic British dish, where hard-boiled eggs are encased in seasoned sausage meat and baked to golden perfection. This dish combines the rich flavor of sausage with the delicate texture of eggs, while the crisp outer layer adds a satisfying crunch. Perfect for breakfast, brunch, or even as a savory snack, these Scotch eggs offer a delicious protein-packed bite that’s surprisingly easy to make, with less oil than the traditional fried version.

Ingredients:

  • 6 large eggs
  • 1 lb sausage meat (pork or chicken sausage works well)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (panko works well)
  • 2 tbsp olive oil
  • 1 egg, beaten (for coating)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Boil the eggs: Place 6 large eggs in a saucepan, cover with water, and bring to a boil. Once boiling, cook the eggs for 5-6 minutes for soft centers, or 7-8 minutes for fully hard-boiled. Transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs carefully.
  3. Prepare the sausage mixture: In a medium bowl, mix the sausage meat with garlic powder, onion powder, paprika, salt, and pepper. Divide the mixture into 6 equal portions.
  4. Coat the eggs: Take one portion of the sausage mixture and flatten it in your hand. Place a peeled egg in the center and carefully wrap the sausage around the egg, ensuring it is fully covered. Repeat with the remaining eggs.
  5. Bread the eggs: In a shallow bowl, place the beaten egg. In another bowl, add the breadcrumbs. Roll each sausage-coated egg in the beaten egg, then roll in breadcrumbs to coat evenly. Place each breaded egg on the prepared baking sheet.
  6. Bake the Scotch Eggs: Lightly brush or drizzle the eggs with olive oil to help them crisp up in the oven. Bake for 20-25 minutes, or until the sausage is cooked through and the outer coating is golden brown.
  7. Serve: Let the Scotch Eggs cool for a few minutes before slicing and serving. They can be enjoyed warm or at room temperature.
