Ingredients:

  • 2 cups rolled oats
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ¼ cup golden syrup (or honey or light corn syrup as a substitute)
  • ¼ tsp salt
  • 1 tsp vanilla extract (optional)
  • ½ cup dried fruit or nuts (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter and sugar: In a medium saucepan, melt the butter, brown sugar, and golden syrup over medium heat, stirring until smooth. Remove from heat and stir in the vanilla extract and salt.
  3. Mix in the oats: Add the rolled oats to the melted butter mixture and stir until the oats are fully coated. If adding dried fruit or nuts, fold them in at this stage.
  4. Bake: Press the mixture evenly into the prepared baking pan, making sure it’s well packed. Bake for 20-25 minutes, or until the flapjacks are golden brown around the edges.
  5. Cool and slice: Let the flapjacks cool in the pan for about 10 minutes before slicing them into bars or squares. Allow them to cool completely in the pan before removing to ensure they hold their shape.
