  • 2 celery stalks, chopped

  • 1 can (15 oz) cannellini or great northern beans, drained and rinsed
  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the sliced sausage and cook for 4–5 minutes, until browned. Remove the sausage from the pot and set aside.
