Onion Focaccia is a soft, airy Italian flatbread topped with caramelized onions and a drizzle of olive oil, making it an irresistible savory treat. The dough, rich in olive oil, bakes to perfection with a golden, crisp exterior and a pillowy interior. The sweet caramelized onions add a depth of flavor, complemented by a sprinkle of sea salt and fresh herbs like rosemary or thyme. This focaccia is perfect as an appetizer, side dish, or even a base for sandwiches. Serve it warm, and enjoy its simplicity and deliciousness alongside soups, salads, or as part of an antipasto spread.

Ingredients:

For the Dough:

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ¼ cups warm water
  • ¼ cup olive oil
  • 1 tsp sugar
  • 1 ½ tsp salt

For the Topping:

  • 2 medium onions, thinly sliced
  • 2 tbsp olive oil (plus more for drizzling)
  • 1 tsp fresh rosemary or thyme, chopped (optional)
  • Sea salt, for sprinkling
  • Freshly ground black pepper

Instructions:

  1. Prepare the dough: In a small bowl, combine the warm water, yeast, and sugar. Let sit for 5-10 minutes until frothy. In a large bowl, mix the flour and salt. Add the yeast mixture and olive oil to the flour and mix until a sticky dough forms.
  2. Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes, until smooth and elastic. Place the dough in an oiled bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
  3. Caramelize the onions: While the dough is rising, heat 2 tablespoons of olive oil in a pan over medium heat. Add the sliced onions and cook slowly, stirring occasionally, for 20-25 minutes until golden brown and caramelized. Set aside.
  4. Shape the dough: Once the dough has risen, punch it down and transfer it to a greased 9×13-inch baking pan or a lined baking sheet. Use your fingers to gently stretch the dough to fit the pan, creating small dimples across the surface.
  5. Top and bake: Preheat the oven to 400°F (200°C). Spread the caramelized onions evenly over the dough. Drizzle with more olive oil and sprinkle with sea salt, pepper, and fresh rosemary or thyme (if using). Bake for 20-25 minutes, or until the focaccia is golden and cooked through.
  6. Serve: Allow the focaccia to cool slightly before slicing. Serve warm.

Enjoy this delicious Onion Focaccia as a flavorful side dish or snack, perfect for any occasion!
