  • 1 cinnamon stick
  • 3 star anise
  • 4 whole cloves
  • 1-inch piece of fresh ginger, sliced
  • 1 onion, quartered

  • 1 tbsp soy sauce
  • 8 oz rice noodles
  • Fresh herbs (cilantro, Thai basil, mint)
  • Bean sprouts, for serving
  • Lime wedges, for serving
  • Thinly sliced jalapeños (optional)
  • Hoisin sauce and sriracha, for serving

Instructions:

  1. Prepare the broth: In a large pot, combine the turkey or chicken broth, cinnamon stick, star anise, cloves, ginger, and onion. Bring to a boil, then reduce heat and simmer uncovered for 30-40 minutes to allow the flavors to meld.
  2. Strain the broth: Remove the pot from heat and strain the broth to discard the solids. Return the broth to the pot and season with fish sauce and soy sauce. Adjust seasoning to taste.
  3. Cook the noodles: Cook the rice noodles according to the package instructions, then drain and set aside.
  4. Assemble the pho: Divide the cooked rice noodles and shredded turkey among serving bowls. Ladle the hot broth over the noodles and turkey.
  5. Garnish and serve: Top each bowl with fresh herbs, bean sprouts, lime wedges, and jalapeños if desired. Serve with hoisin sauce and sriracha on the side for extra flavor.
