Israeli Couscous, also known as pearl couscous, is a versatile and satisfying side dish with a unique, chewy texture. Unlike traditional couscous, the larger, pearl-like grains of Israeli couscous have a delightful bite and are perfect for absorbing flavors from broths, herbs, and seasonings. This dish can be served warm or cold and pairs beautifully with roasted vegetables, grilled meats, or fish. Lightly toasted before cooking, Israeli couscous takes on a subtle nutty flavor that enhances its overall taste, making it a perfect addition to any meal.

Ingredients:

  • 1 ½ cups Israeli couscous (pearl couscous)
  • 2 tbsp olive oil
  • 2 ½ cups vegetable or chicken broth (or water)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • 1 tbsp fresh lemon juice
  • ¼ cup fresh parsley, chopped
  • Optional toppings: feta cheese, roasted vegetables, or toasted pine nuts

Instructions:

  1. Toast the couscous: In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the Israeli couscous and cook, stirring frequently, for 3-4 minutes until the couscous is lightly toasted and golden.
  2. Sauté the onion and garlic: In the same pan, push the couscous to the side and add the remaining tablespoon of olive oil. Add the chopped onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for another minute.
  3. Cook the couscous: Pour in the broth (or water) and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10-12 minutes, or until the couscous is tender and the liquid is absorbed.
  4. Finish with lemon and herbs: Remove the saucepan from heat and fluff the couscous with a fork. Stir in the lemon juice and fresh parsley.
  5. Serve: Serve warm as a side dish or salad base. Optionally, top with feta cheese, roasted vegetables, or toasted pine nuts for extra flavor and texture.
