Swiss Chard Gratin

Swiss chard gratin is a comforting and flavorful dish that turns the hearty greens of Swiss chard into a creamy, cheesy masterpiece. The tender chard is cooked until wilted, then baked in a rich béchamel sauce with garlic, nutmeg, and a topping of breadcrumbs and melted cheese for an irresistible golden crust. Ingredients:

  • 1 large bunch Swiss chard, stems removed and leaves chopped
  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk
  • ¼ tsp ground nutmeg
  • Salt and pepper, to taste
  • ½ cup grated Gruyère or Parmesan cheese
  • ¼ cup breadcrumbs
  • 2 tbsp butter, melted (for topping)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and grease a small baking dish or gratin dish.
  2. Cook the chard: Heat the olive oil or butter in a large skillet over medium heat. Add the chopped onion and garlic and sauté until softened, about 3 minutes. Add the chopped Swiss chard leaves and cook until wilted and tender, about 5-7 minutes. Season with salt, pepper, and nutmeg. Set aside.
  3. Make the béchamel sauce: In the same skillet, melt 2 tablespoons of butter. Stir in the flour to create a roux, cooking for 1 minute. Gradually whisk in the milk and cook, stirring constantly, until the sauce thickens (about 3-4 minutes). Season with salt and pepper to taste.
  4. Assemble the gratin: Combine the cooked Swiss chard with the béchamel sauce and transfer the mixture to the prepared baking dish. Sprinkle the grated cheese evenly over the top.
  5. Add the breadcrumb topping: In a small bowl, combine the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the top of the cheese.
  6. Bake: Bake the gratin for 20-25 minutes, or until the top is golden and bubbly. Let cool slightly before serving.
