LEMON SQUARES

Lemon Squares are a classic, tangy-sweet dessert featuring a buttery shortbread crust topped with a smooth, zesty lemon filling. Ingredients:

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Make the Crust:
    • In a medium bowl, combine the softened butter, flour, powdered sugar, and a pinch of salt. Mix until the dough comes together and forms a soft, crumbly texture.
    • Press the dough evenly into the bottom of the prepared baking pan to form a smooth layer.
    • Bake the crust in the preheated oven for 15-18 minutes, or until lightly golden. Remove from the oven and set aside.
  3. Prepare the Lemon Filling:
    • In a large mixing bowl, whisk together the granulated sugar and flour. Add the eggs and whisk until smooth.
    • Stir in the freshly squeezed lemon juice and lemon zest (if using), mixing until well combined.
  4. Pour the Filling Over the Crust:
    • Once the crust is baked and slightly cooled, pour the lemon filling over the warm crust.
  5. Bake the Lemon Squares:
    • Return the pan to the oven and bake for 20-25 minutes, or until the lemon filling is set and no longer jiggles in the center.
    • Remove from the oven and allow the lemon squares to cool completely.
  6. Dust with Powdered Sugar:
    • Once cooled, dust the top of the lemon squares with powdered sugar for a decorative finish.
  7. Cut and Serve:
    • Use a sharp knife to cut the lemon bars into squares. Serve chilled or at room temperature.
