STUFFED SUMMER SQUASH

Stuffed Summer Squash is a delicious and nutritious dish that features tender squash filled with a flavorful mixture of meat, vegetables, and cheese. This versatile recipe can be customized to suit your taste preferences, and it makes a great side dish or light main course. Perfect for using up garden-fresh squash, this meal is both healthy and satisfying.

Ingredients:

  • 4 medium yellow summer squash or zucchini
  • 1/2 lb ground beef, turkey, or sausage (or a vegetarian substitute)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup cooked rice or quinoa (optional for extra texture)
  • 1/2 cup diced tomatoes (fresh or canned, drained)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Parmesan)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika (optional)
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish or line it with parchment paper.
  2. Prepare the Squash:
    • Cut the squash in half lengthwise and scoop out the seeds and some of the flesh to create a cavity for the filling. Be careful not to remove too much flesh, leaving about 1/4 inch of squash. Set the scooped-out flesh aside for the filling.
  3. Cook the Filling:
    • Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute.
    • Add the ground meat (or vegetarian substitute) and cook until browned, breaking it up into small pieces. Season with Italian seasoning, paprika (if using), salt, and pepper.
    • Stir in the diced tomatoes, rice (if using), and the scooped-out squash flesh (chopped finely). Cook for another 2-3 minutes, allowing the flavors to combine.
  4. Stuff the Squash:
    • Place the hollowed-out squash halves in the prepared baking dish. Spoon the filling into each squash half, packing it in firmly. Top each squash with a sprinkle of shredded cheese.
  5. Bake the Squash:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the squash is tender.
    • Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  6. Serve:
    • Remove the stuffed squash from the oven and let them cool for a few minutes. Garnish with fresh parsley or basil before serving.
