Divinity is a classic old-fashioned candy that’s known for its fluffy, cloud-like texture and sweet, melt-in-your-mouth flavor. Made primarily from sugar, corn syrup, and egg whites, this confection has a light, airy consistency that pairs beautifully with a touch of vanilla and sometimes a sprinkle of nuts. Traditionally made during the holiday season, Divinity is perfect for gifting or adding to festive dessert trays. Although it requires a bit of patience and careful timing, the result is a delightful, pillowy treat that’s well worth the effort.

Ingredients:

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)
  • Pinch of salt

Instructions:

  1. Prepare for Candy-Making: Line a baking sheet with parchment paper and set it aside. Make sure all your ingredients are ready before starting, as candy-making can move quickly.
  2. Cook the Sugar Syrup: In a medium saucepan, combine the sugar, corn syrup, and water. Cook over medium heat, stirring constantly until the sugar dissolves. Once dissolved, stop stirring and continue cooking until the syrup reaches 250°F (hard-ball stage) on a candy thermometer.
  3. Beat the Egg Whites: While the syrup is cooking, beat the egg whites with a pinch of salt in a stand mixer or with a hand mixer until stiff peaks form.
  4. Combine Syrup and Egg Whites: Once the syrup reaches the correct temperature, carefully and slowly pour it in a thin stream into the beaten egg whites while the mixer is running on medium speed. Continue beating the mixture until it becomes thick, glossy, and holds its shape (about 4-6 minutes).
  5. Add Flavor and Nuts: Quickly beat in the vanilla extract and, if using, fold in the chopped pecans or walnuts.
  6. Shape the Divinity: Using two spoons, drop small mounds of the candy mixture onto the prepared parchment paper. Alternatively, you can scoop the mixture into a piping bag and pipe small mounds.
  7. Let It Set: Allow the Divinity to cool and set at room temperature for several hours or until firm.

Store your Divinity in an airtight container for up to a week. This light, airy confection is a timeless treat, perfect for holiday platters or as a sweet indulgence any time of the year!
