These fluffy egg muffins are loaded with savory ham, gooey melted cheese, and a sprinkle of fresh herbs, making them a versatile and tasty meal-on-the-go. They are great for meal prep, customizable with your favorite ingredients, and perfect for a quick grab-and-go breakfast.

Ingredients:

  • 6 large eggs
  • ½ cup diced ham
  • ½ cup shredded cheddar cheese (or any cheese of your choice)
  • ¼ cup milk or heavy cream
  • ¼ cup diced bell peppers (optional)
  • ¼ cup chopped spinach or other greens (optional)
  • Salt and pepper, to taste
  • 1 tsp garlic powder (optional)
  • 1 tbsp chopped fresh herbs (parsley or chives, optional)
  • Non-stick cooking spray or butter, for greasing the muffin tin

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with non-stick cooking spray or butter to prevent sticking.
  2. Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them together with the milk or cream. Add the garlic powder, salt, and pepper to taste.
  3. Add Fillings: Stir in the diced ham, shredded cheese, bell peppers, spinach, and any other mix-ins you like. Add the fresh herbs if using for extra flavor.
  4. Fill the Muffin Tin: Pour the egg mixture evenly into each cup of the greased muffin tin, filling each about ¾ full. Be careful not to overfill, as the eggs will puff up while baking.
  5. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg muffins are set and lightly golden on top. A toothpick inserted into the center should come out clean when they’re done.
  6. Cool and Serve: Let the muffins cool in the tin for a few minutes before removing them. Serve warm or at room temperature.
  7. Storage: These egg muffins can be stored in an airtight container in the refrigerator for up to 4 days or frozen for longer storage. To reheat, simply microwave them for 30-60 seconds.

These ham and cheese egg muffins are perfect for busy mornings and can be customized with your favorite ingredients like bacon, mushrooms, or onions!
