CHOCOLATE COCONUT BITES

Chocolate Coconut Bites are the perfect indulgent snack for when you’re craving something sweet yet healthy. These bite-sized treats combine the rich, decadent flavor of chocolate with the tropical sweetness of coconut, creating a chewy, satisfying texture. Best of all, they’re incredibly easy to make with just a few ingredients, and they don’t require any baking! Ingredients:

  • 2 cups shredded coconut (unsweetened)
  • 1 cup coconut cream (or condensed milk for a sweeter version)
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 200 grams dark chocolate or semi-sweet chocolate (chopped or in chips)
  • 1 tbsp honey or maple syrup (optional for extra sweetness)
  • A pinch of sea salt (optional)

Instructions:

  1. Prepare the Coconut Mixture: In a large mixing bowl, combine the shredded coconut, coconut cream (or condensed milk), and vanilla extract. If using, add the honey or maple syrup for extra sweetness. Mix until everything is well combined and forms a sticky, moldable mixture.
  2. Shape the Bites: Scoop out tablespoon-sized portions of the coconut mixture and shape them into small balls or bite-sized bars with your hands. Place them on a tray lined with parchment paper. Once all the bites are shaped, put the tray in the freezer for about 20-30 minutes to firm up.
  3. Melt the Chocolate: In a microwave-safe bowl or using a double boiler, melt the dark chocolate with the coconut oil until smooth and silky. If using a microwave, melt in 20-second intervals, stirring in between to prevent burning.
  4. Coat the Coconut Bites: Remove the coconut bites from the freezer and, using a fork or toothpick, dip each one into the melted chocolate until completely coated. Place the coated bites back on the parchment-lined tray. Optionally, sprinkle a pinch of sea salt on top for a sweet-salty contrast.
  5. Set the Chocolate: Let the chocolate-covered coconut bites set by placing them back in the refrigerator for 20-30 minutes or until the chocolate hardens.
  6. Serve and Store: Once the chocolate is set, your chocolate coconut bites are ready to enjoy! Store them in an airtight container in the fridge for up to a week.
