SPÄTZLE

Spätzle is a traditional German egg noodle dish, often served as a side to hearty stews or as a main dish topped with butter or cheese. These small, soft dumplings are simple to make and incredibly versatile. Spätzle pairs wonderfully with meat dishes, gravies, or can be served simply with butter and herbs.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 3 large eggs
  • 1/2 cup milk or water
  • 2 tablespoons butter
  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions:

  1. Prepare the dough:
    • In a large bowl, whisk together the flour, salt, black pepper (if using), and nutmeg (if using). Make a well in the center and add the eggs and milk. Stir with a wooden spoon or whisk until the batter is smooth and slightly sticky. The dough should be thicker than pancake batter but not as stiff as bread dough.
  2. Bring water to a boil:
    • Fill a large pot with water and bring it to a boil. Add a pinch of salt to the water.
  3. Make the spätzle:
    • There are a few methods to form the spätzle:
      • Spätzle maker: Use a spätzle maker or grater-like tool to press the dough directly into the boiling water.
      • Colander: You can use a colander with large holes. Place the dough in the colander and press it through the holes with a spatula or spoon into the boiling water.
      • Knife and board method: Place a small amount of dough on a cutting board and use a knife or bench scraper to cut small pieces of dough into the boiling water.
  4. Cook the spätzle:
    • Once the spätzle floats to the top of the water (about 1-2 minutes), they are done. Use a slotted spoon to remove them from the water and place them in a colander to drain.
  5. Sauté in butter:
    • In a large skillet, melt the butter over medium heat. Add the drained spätzle and sauté for a few minutes until lightly golden and crisp at the edges.
  6. Serve:
    • Garnish with fresh parsley or chives if desired. Serve the spätzle with a side of gravy, meat dishes, or enjoy them simply with butter.
