Ingredients:

For the coconut layer:

  • 2 cups shredded sweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the chocolate layer:

  • 1 1/2 cups semi-sweet chocolate chips (or dark chocolate, if preferred)
  • 2 tablespoons coconut oil (or butter)

Instructions:

  1. Prepare the coconut layer:
    • In a medium bowl, mix the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt until well combined. The mixture should be thick and sticky.
  2. Press the coconut mixture into a pan:
    • Line an 8×8-inch baking dish with parchment paper. Press the coconut mixture evenly into the bottom of the dish to form the base layer. Set aside.
  3. Melt the chocolate:
    • In a microwave-safe bowl or using a double boiler, melt the chocolate chips and coconut oil (or butter) together. Stir until smooth and fully melted.
  4. Pour the chocolate over the coconut layer:
    • Pour the melted chocolate over the coconut layer, spreading it evenly with a spatula to cover the entire surface.
  5. Chill the bars:
    • Place the dish in the refrigerator for at least 2 hours, or until the chocolate is firm and set.
  6. Cut and serve:
    • Once the chocolate has hardened, remove the bars from the dish by lifting the parchment paper. Cut into squares and serve.

These Chocolate Coconut Squares are rich, sweet, and perfect for any chocolate and coconut lover. They make a wonderful treat for dessert or a midday snack, and they can be stored in the refrigerator for up to a week!
