MAPLE WALNUT GRANOLA

Maple Walnut Granola is a delicious and healthy homemade granola that’s sweetened with pure maple syrup and packed with crunchy walnuts, oats, and seeds. It’s perfect for breakfast, snacks, or topping yogurt, and it’s easy to make with wholesome ingredients.

Ingredients:

  • 3 cups old-fashioned rolled oats
  • 1 cup walnuts, chopped
  • 1/4 cup sunflower seeds (optional)
  • 1/4 cup pumpkin seeds (optional)
  • 1/2 cup shredded coconut (optional)
  • 1/3 cup pure maple syrup
  • 1/4 cup coconut oil (or olive oil)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup dried fruit (raisins, cranberries, or chopped dates – optional)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  2. Mix the dry ingredients:
    • In a large mixing bowl, combine the oats, chopped walnuts, sunflower seeds, pumpkin seeds, and shredded coconut (if using).
  3. Prepare the wet ingredients:
    • In a small saucepan over low heat, warm the coconut oil and maple syrup until the coconut oil is melted. Remove from heat and stir in the vanilla extract, cinnamon, and salt.
  4. Combine and toss:
    • Pour the maple syrup mixture over the oat mixture and toss until everything is well coated.
  5. Spread and bake:
    • Spread the granola mixture in an even layer on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant. Keep an eye on it to avoid burning.
  6. Cool and add dried fruit:
    • Once the granola is baked, remove it from the oven and let it cool completely on the baking sheet. Stir in the dried fruit if using.
  7. Store:
    • Transfer the granola to an airtight container once it’s completely cool. It can be stored at room temperature for up to two weeks.
