Baked Polenta

Baked polenta is a comforting, Italian-inspired dish that offers both a creamy and crispy texture in one bite. This versatile recipe is perfect as a side dish or a hearty main course. It’s made by simmering cornmeal until thick and smooth, then baking it in the oven until golden and slightly crispy on the edges. You can enjoy it plain with a sprinkle of Parmesan cheese or add toppings like sautéed mushrooms, tomato sauce, or roasted vegetables to enhance its flavor. It’s a fantastic make-ahead dish that’s easy to prepare and customize for any meal.

Ingredients:

  • 1 cup cornmeal (polenta)
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoons butter
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (optional)
  • Olive oil, for greasing

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or butter.
  2. Cook the Polenta: In a medium saucepan, bring the water and salt to a boil. Gradually whisk in the cornmeal, stirring constantly to prevent lumps. Reduce heat to low and cook the polenta for about 20-25 minutes, stirring occasionally, until it thickens and pulls away from the sides of the pan.
  3. Add Butter and Cheese: Once the polenta is cooked, stir in the butter, Parmesan cheese, and Italian herbs if using. Mix until the butter and cheese have melted and are well incorporated.
  4. Transfer to Baking Dish: Pour the cooked polenta into the greased baking dish and spread it evenly using a spatula.
  5. Bake: Bake the polenta for 25-30 minutes, or until the top is golden and crispy. For an extra crisp, you can broil it for an additional 2-3 minutes.
  6. Serve: Let the baked polenta cool slightly, then cut into squares or wedges. Serve warm with your favorite toppings or as a side dish to a main course.

Enjoy your baked polenta!
