Roasted Vegetable Quesadillas

Ingredients:

  • 1 zucchini, sliced
  • 1 small red onion, sliced
  • 1 tablespoon olive oil

  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

Instructions:

  1. Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Roast the vegetables: Place the sliced bell peppers, zucchini, and red onion on the prepared baking sheet. Drizzle with olive oil, then sprinkle with cumin, smoked paprika, salt, and pepper.
