Ingredients:

  • 1 medium head of cauliflower, cut into florets

  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon nutmeg (optional)

  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Steam the vegetables: In a large pot of boiling water, steam the cauliflower and broccoli florets for about 5-7 minutes, or until just tender. Drain and set aside.
  3. Make the béchamel sauce: In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes, stirring constantly, until the flour is lightly golden. Slowly whisk in the milk and cook until the mixture thickens, about 5 minutes. Season with nutmeg, salt, and pepper.

  5. Assemble the gratin: Place the steamed cauliflower and broccoli into the prepared baking dish. Pour the cheese sauce evenly over the vegetables, making sure they are well coated.
