Ingredients:

  • 4 large russet potatoes, baked and cooled

  • 1/2 cup milk
  • 4 tbsp unsalted butter, melted
  • 1 1/2 cups shredded cheddar cheese, divided
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, chopped
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Scoop the flesh out of the baked potatoes into a large bowl, discarding the skins or saving them for another use. Mash the potatoes until smooth.
  3. Stir in the sour cream, milk, melted butter, garlic powder (if using), and 1 cup of cheddar cheese. Season with salt and pepper to taste.
  4. Fold in half of the crumbled bacon and green onions, mixing well.
  5. Spread the potato mixture evenly into the prepared baking dish. Top with the remaining 1/2 cup cheddar cheese and the rest of the bacon.
  6. Bake for 20-25 minutes, or until the cheese is melted and the casserole is heated through.
  7. Garnish with the remaining green onions before serving.
