Chicken Marsala Pasta

Chicken Marsala Pasta is a rich and comforting dish that combines the classic flavors of chicken Marsala with the heartiness of pasta. Tender chicken breast is cooked in a creamy Marsala wine sauce with earthy mushrooms, then tossed with perfectly cooked pasta for a meal that’s both elegant and easy to make. Ingredients:

  • 12 oz pasta (penne or fettuccine works well)
  • 1 lb chicken breasts, sliced into thin strips
  • 1 cup mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat. Season the chicken strips with salt and pepper, then cook them in the skillet until golden brown on both sides, about 4-5 minutes. Remove the chicken from the pan and set aside.
  3. In the same skillet, add the mushrooms and cook until they begin to soften, about 3 minutes. Add the garlic and cook for another minute until fragrant.
  4. Pour in the Marsala wine, stirring to deglaze the pan and bring up any browned bits from the bottom. Let the wine simmer for 2-3 minutes until it reduces slightly.
  5. Add the chicken broth and heavy cream, stirring to combine. Let the sauce simmer for 5-7 minutes until it thickens slightly.
  6. Stir in the Parmesan cheese, and return the cooked chicken to the pan. Simmer for another 2-3 minutes until the chicken is heated through and the sauce has thickened.
  7. Toss the cooked pasta in the sauce until well coated.
  8. Serve hot, garnished with fresh parsley if desired.
