Coconut Macaroons

Instructions

  1. Preheat the oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Mix the ingredients: In a large bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir until well combined.
  3. Whip the egg whites: In a separate bowl, beat the egg whites and salt until stiff peaks form. Gently fold the whipped egg whites into the coconut mixture, being careful not to deflate the mixture.
  4. Form the macaroons: Using a spoon or cookie scoop, drop mounds of the coconut mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  5. Bake: Bake the macaroons for 20-25 minutes, or until the tops are golden brown and the edges are set. Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
