Apple Crumble Cake

Ingredients:

For the cake:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp)

For the crumble topping:

  • ¾ cup all-purpose flour
  • ½ cup light brown sugar, packed
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg (optional)
  • ¼ cup unsalted butter, cold and cubed

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan.
  2. Prepare the crumble topping: In a medium bowl, combine the flour, brown sugar, cinnamon, and nutmeg (if using). Add the cold, cubed butter, and use a pastry cutter or your hands to mix until the topping resembles coarse crumbs. Set aside.
  3. Make the cake batter: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
