Shrimp Stuffed Mushrooms

Shrimp stuffed mushrooms are an elegant yet simple appetizer perfect for any gathering. The juicy shrimp filling is seasoned with a blend of herbs, garlic, and cream cheese, giving these mushrooms a deliciously creamy and savory taste. Ingredients:

  • 20 large white mushrooms, stems removed
  • 1/2 pound shrimp, peeled, deveined, and chopped
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 garlic cloves, minced
  • 2 tbsp parsley, chopped
  • 2 tbsp green onions, chopped
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  2. Prepare Mushrooms: Clean the mushrooms, remove the stems, and scoop out a bit of the inside to make room for the stuffing. Set aside.
  3. Cook Shrimp: In a skillet, heat 1 tbsp of olive oil over medium heat. Add the chopped shrimp and cook until just pink, about 2-3 minutes. Remove from heat.
  4. Make Filling: In a bowl, mix together the cooked shrimp, cream cheese, Parmesan, garlic, parsley, green onions, lemon juice, and salt and pepper to taste.
  5. Stuff Mushrooms: Spoon the shrimp mixture into the hollowed-out mushrooms. Place them on the prepared baking sheet.
  6. Add Topping: In a small bowl, mix the breadcrumbs with the remaining olive oil. Sprinkle this mixture over the top of each stuffed mushroom.
  7. Bake: Bake the mushrooms in the preheated oven for 15-20 minutes, or until the tops are golden and the mushrooms are tender.
  8. Serve: Remove from the oven and let cool slightly before serving. Garnish with extra parsley if desired.
