Ingredients:
- 20 large white mushrooms, stems removed
- 1/2 pound shrimp, peeled, deveined, and chopped
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 garlic cloves, minced
- 2 tbsp parsley, chopped
- 2 tbsp green onions, chopped
- 1 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
- Prepare Mushrooms: Clean the mushrooms, remove the stems, and scoop out a bit of the inside to make room for the stuffing. Set aside.
- Cook Shrimp: In a skillet, heat 1 tbsp of olive oil over medium heat. Add the chopped shrimp and cook until just pink, about 2-3 minutes. Remove from heat.
