Ingredients

For the Rice:

  • 1 cup sushi rice (or short-grain rice)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

For the Protein:

  • 8 oz sushi-grade salmon or tuna, diced (or cooked shrimp, tofu, or crab)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

For the Bowl:

  • 1 cucumber, thinly sliced
  • 1 carrot, julienned or shredded
  • 1 avocado, sliced
  • 1/4 cup edamame (cooked and shelled)
  • 1/4 cup pickled ginger
  • 2 sheets nori (seaweed), cut into strips
  • 1 tablespoon sesame seeds
  • Soy sauce or tamari, for drizzling
  • Sriracha mayo or spicy mayo (optional)

Instructions

  1. Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, or use a rice cooker. Once the rice is cooked, transfer it to a bowl. In a small bowl, mix together the rice vinegar, sugar, and salt, then stir this mixture into the rice. Let the rice cool slightly.
  2. Prepare the Protein: If using raw fish, toss the diced salmon or tuna with soy sauce and sesame oil. If using cooked shrimp, tofu, or crab, you can season it similarly or leave it plain.
  3. Assemble the Bowls: Divide the sushi rice among serving bowls. Arrange the cucumber, carrot, avocado, edamame, and pickled ginger on top of the rice. Add your protein of choice to each bowl.
  4. Add Toppings: Garnish with strips of nori, sesame seeds, and any additional toppings like soy sauce, tamari, or a drizzle of sriracha mayo for a spicy kick.
  5. Serve: Serve immediately and enjoy your fresh, flavorful Sushi Bowls!

These Sushi Bowls are a perfect way to enjoy all the flavors of sushi in a quick, easy-to-make meal, offering endless options for customization to suit your taste!
