CHOCOLATE CHIP CHEESECAKE BARS

Chocolate Chip Cheesecake Bars are the perfect blend of two dessert favorites—rich, creamy cheesecake and classic chocolate chip cookies. With a buttery cookie crust, a smooth cheesecake layer, and a generous sprinkling of chocolate chips throughout, these bars offer a decadent yet easy-to-make treat. Whether you’re serving them at a party or indulging in a casual dessert at home, these bars strike the perfect balance between chewy, crispy, and creamy textures, making them an irresistible option for any occasion.

Ingredients

For the Cookie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease or line an 8×8-inch baking pan with parchment paper.
  2. Make the Cookie Dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
  3. Prepare the Cheesecake Layer: In another bowl, beat the cream cheese until smooth and creamy. Add the sugar, egg, and vanilla extract, and beat until fully combined and smooth.
  4. Assemble the Bars: Press half of the cookie dough into the bottom of the prepared baking pan to form an even layer. Pour the cheesecake mixture over the cookie dough and spread it evenly. Drop spoonfuls of the remaining cookie dough over the cheesecake layer. It’s okay if some of the cheesecake layer is still visible.
  5. Bake: Bake for 30-35 minutes, or until the cookie layer is golden brown and the cheesecake is set. Allow the bars to cool in the pan, then transfer them to the refrigerator to chill for at least 2 hours.
  6. Slice and Serve: Once fully chilled, cut the bars into squares and serve. Store any leftovers in the refrigerator.

Enjoy your rich and creamy Chocolate Chip Cheesecake Bars, a decadent dessert that’s perfect for sharing—or savoring all by yourself!
