Ingredients

  • 2 tablespoons butter
  • 4 slices bacon, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 3 medium potatoes, peeled and cubed
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 lb salmon fillets, skin removed and cut into bite-sized pieces
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 tablespoons fresh dill or parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Cook the Bacon: In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
  2. Sauté the Vegetables: Add the chopped onion, celery, and carrots to the pot. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for another minute until fragrant.
  3. Add Potatoes and Broth: Stir in the cubed potatoes and pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Add the Salmon and Cream: Once the potatoes are cooked, stir in the heavy cream and fresh thyme. Gently add the salmon pieces and simmer for an additional 5-7 minutes, or until the salmon is just cooked through and flakes easily.
  5. Season and Serve: Season the chowder with salt and pepper to taste. Ladle the chowder into bowls and garnish with fresh dill or parsley. If desired, serve with lemon wedges for a bright, zesty finish.

Enjoy your creamy, flavorful Salmon Chowder as a comforting meal perfect for any seafood lover!
