Slow-cooked to perfection, this stew is a fantastic meal for cold days or whenever you crave something comforting with a bit of heat. Serve it with crusty bread for an unforgettable dinner.

Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder (or more, to taste)
  • 1/2 teaspoon cayenne pepper (optional for extra heat)
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef with salt and pepper. Add the beef in batches, browning all sides, about 5-6 minutes per batch. Remove the beef from the pot and set aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onion, carrots, and bell pepper. Sauté for about 5 minutes until softened. Add the garlic and cook for another minute until fragrant.
  3. Add Spices and Tomato Paste: Stir in the tomato paste, cumin, smoked paprika, chili powder, and cayenne pepper. Cook for 1-2 minutes to allow the spices to become fragrant.
  4. Simmer the Stew: Add the beef broth, diced tomatoes, browned beef, cubed potatoes, and bay leaf to the pot. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the flavors are well-developed.
  5. Adjust Seasoning and Serve: Remove the bay leaf and taste the stew, adjusting salt, pepper, or chili powder as needed. Ladle the stew into bowls and garnish with fresh parsley or cilantro.
