Banana Chocolate Chip Loaf

Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • 3/4 cup (135g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, mix the melted butter and mashed bananas until well combined.
  3. Add the sugar, egg, and vanilla extract, and stir until the mixture is smooth.
  4. Sprinkle the baking soda and salt over the mixture, then stir to combine.
  5. Gently fold in the flour until just incorporated. Be careful not to overmix the batter.
  6. Add the chocolate chips and fold them into the batter until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
