Ingredients:

  • 2 salmon fillets
  • 200g (7 oz) noodles (such as soba, udon, or rice noodles)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons water
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons vegetable oil, divided
  • 1 cup broccoli florets (or other vegetables like bell peppers, carrots, or snap peas)
  • 2 green onions, sliced
  • Sesame seeds and chopped cilantro (for garnish, optional)

Instructions:

  1. Cook the noodles: Cook the noodles according to the package instructions. Drain and set aside.
  2. Make the teriyaki sauce: In a small bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, water, garlic, and ginger. If you prefer a thicker sauce, dissolve the cornstarch in the water before adding it to the mixture.
  3. Cook the salmon: Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the salmon fillets, skin side down, and cook for 3-4 minutes on each side, or until the salmon is cooked through and caramelized on the outside. Remove from the pan and set aside.
  4. Stir-fry the vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Stir-fry the broccoli (or other vegetables) for 3-4 minutes until they are tender-crisp.
  5. Combine everything: Add the cooked noodles and the teriyaki sauce to the pan with the vegetables. Toss everything together to coat the noodles and veggies evenly in the sauce. Return the salmon to the pan, breaking it into large chunks, and gently stir to combine.
  6. Serve: Divide the teriyaki salmon noodles into bowls and garnish with sliced green onions, sesame seeds, and chopped cilantro if desired.

This Teriyaki Salmon Noodles dish is packed with flavor and nutrition, offering a quick and satisfying meal that’s perfect for weeknights!
