Mixed Vegetable Curry

  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 2 tomatoes, chopped
  • 1/2 cup coconut milk or water (for a lighter curry)
  • 1 cup potatoes, cubed
  • 1 cup carrots, sliced
  • 1 cup cauliflower florets
  • 1 cup green beans, chopped
  • 1 cup peas (fresh or frozen)
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Heat the oil in a large pan over medium heat. Add cumin seeds and mustard seeds, and let them sizzle until aromatic, about 1 minute.
  2. Add the chopped onion and sauté until golden brown, about 5-7 minutes. Stir in the garlic and ginger, cooking for another minute.
